Spiced Apple Cake

• 2 cups cubed green apples
• 1 3/4 cups sugar
• 2 eggs, beaten
• 260g butter, melted
• 1/2 cup raisins
• 1 cup walnuts
• 2 1/2 cups flour
• 1 tsp bicarb
• 1 tsp mixed spice

1. Oven at 180C. Mix wet ingredients (all but flour, bicarb spice) together.
2. Fold sifted dry ingredients in until combined.
3. Pour into 23cm greased tin and bake for 1h 15mins until a skewer comes out dry.
