Broth
- chicken
- a few chicken wings
- onion
- couple leeks and celery sticks
- couple tomatoes
- several peppercorns
- parsley stalks and a few bay leaves
- Put all ingredients into a deep pan and fill cold water to submerge
the bird.
- After heating to a boil turn heat down to minimal bubbling - a
gentle simmer.
- After an hour or so remove the chicken, shred the meat and return
the carcass.
- After another hour or more strain out the broth with a sieve to
cool.
