Garlic Chicken (Chkmeruli)
a Georgian dish
- one chicken, in pieces
- olive oil
- 12 cloves of garlic
- 1 cup walnuts
- Add a few tablespoons of oil to a casserole or large baking tray and heat in a 220C oven.
- Season the chicken pieces and roast in the oil for 20-30 minutes until done, turning midway.
- Meanwhile whizz the garlic and walnuts in a food processor (or grind).
- When the chicken is done set aside the pieces and add the garlic mix to the pan juices with a cup of water, season and simmer for 5 minutes.
- Return the chicken and coat well with the sauce.
tips
* serve with rice cooked with lots of chopped coriander and parsley
* you can use a whole roast chicken then torn into pieces after roasting
* make sure to cook off the harshness of raw garlic before adding the chicken
