Chicken Katsu Donburi (チキンカツ丼)
- 2 chicken breasts
- 1 egg
- flour
- panko
- 2 onions, sliced
- 1 cup of dashi
- 3 tbsp of soya sauce
- 2 tbsp of mirin
- 3 eggs, whisked
- cooked rice
- spring onion
- sesame seeds
- Open up, flatten and slash into the chicken breast.
- Mix an egg, flour, and cold water to make a thick batter. Coat the chicken in the batter first and then in panko. Fry in hot oil until golden.
- Cut the chicken into strips and set aside.
- Simmer the dashi, soy, mirin, and thinly sliced onion in a pan until the onion is soft.
- Add the chicken on top of the onions and pour the whisked eggs over. Using a chopstick, lightly stir so the eggs can set. Let the eggs cook for 1 minute or until 95% cooked. Serve on top of a bowl of rice with the spring onion and sesame seeds.
