Pasta Sauces

Simple sauces that are served with pasta.

minced-beef pancetta carrot onion celery tomato-pureé white-wine stock nutmeg

Brown ~80g of pancetta in olive oil then add a finely chopped onion, carrot and celery stick. After browning add 250g minced beef. Add a few tbsps pureé and a glassful of wine scraping the browned bits. Season and add nutmeg before adding two wine glasses of stock. Simmer very gently for an hour.

tips * Pasta: Spaghetti or Tagliatelle. * Add cream just before the end.
pomodoro al marsala ------------------- tomatoes onion bacon garlic marsala Fry the onion in olive oil and add the bacon in small pieces. Add 500g of tomatoes peeled and quartered cooking hard for five minutes. Add a sherry glassful of marsala and continue for another five minutes.
tips * Pasta: Penne or Tortiglioni * Without ripe tomatoes use a tin of peeled plum tomatoes.
salsa di tonno -------------- tuna stock parsley Fry 150g of tinned tuna gently for five minutes adding parsley. Add the stock and simmer for another five minutes; season.
