Simple Cake
- butter
- sugar
- a lemon, zest and juice
- ground almonds
- plain flour
- dried apricots finely whizzed in processor
- eggs
- Set oven to 180C. Beat 250g butter and 250g sugar until fluffy. Add 4 eggs slowly to mix.
- Mix 75g flour and 100g ground almonds and slowly add the lemon zest and a third of the dry ingredients into the mix.
- Slowly mix in the second third until smooth. Then the final third.
- Finally lightly mix in 100g whizzed apricots and lemon juice.
- Add to a lined 23cm tin and bake for ~35 mins.
