Simple Cake

  1. Set oven to 180C. Beat 250g butter and 250g sugar until fluffy. Add 4 eggs slowly to mix.
  2. Mix 75g flour and 100g ground almonds and slowly add the lemon zest and a third of the dry ingredients into the mix.
  3. Slowly mix in the second third until smooth. Then the final third.
  4. Finally lightly mix in 100g whizzed apricots and lemon juice.
  5. Add to a lined 23cm tin and bake for ~35 mins.
